Homemade "Real" Nacho Cheese

Who doesn't love Nachos?!

Well, my husband pointed out that someone who is lactose intolerant may not. But, they may still love nachos. They might not be able to eat them, but still.

My family loves them. But, I don't really love the idea of opening a can of processed who-knows-what to feed my family. So, I developed my own recipe for homemade "real" nacho cheese.

Homemade "Real" Nacho Cheese

  • 4 Tbsp Butter
  • 4-5 Tbsp Flour or flour substitute
  • 1/2 lb Ground Beef  (optional)
  • 1 package all-natural  taco or fajita seasoning (we use elRio brand)
  • 1/2 cup mild salsa (or whatever you prefer)
  • 8 oz cheddar cheese, shredded
  • 3 1/2 - 4 cups milk
  • Suggested Garnishes: black olives, all natural sour cream, chopped fresh tomato, etc. Sides: refried beans, side salad.
  • Brown ground beef, drain. Mix in taco seasoning and set aside.
  • In a large skillet, melt the butter over medium heat. Mix in 4 tbsp flour. If all of the butter is not soaked up, mix in the remaining flour. Simmer for 1-2 minutes and reduce heat to low. 
  • Pour in 3 1/2 cups of milk all at once, mixing well to combine with flour. Mix in beef and salsa. Return heat to medium, stirring frequently. When milk is warm, add in the cheese. Stirring frequently and mixing in the cheese as it melts, let simmer for 5-10 minutes until the sauce thickens. Remember, the sauce will thicken as it cools. If you feel the sauce is getting too thick, add the remaining milk, bringing it back to a simmer until slightly thinner than your desired consistency.
  • Serve warm with tortilla chips.

Seriously, if you don't know how to make a basic cheese sauce, you need to learn. It's so easy, and you can improvise a ton of yummy sauces at home!
